I’ve been on a bit of a hiatus, trying to curate some new content for the blog, looking for inspiration in apparently the most distractible places haha. So here we go! Start of the work-week for some, I hope you guys enjoyed the long weekend! Since you are hustling at work, here is some motivation for you:

The secret to getting ahead is getting started. 

I sincerely believe this to be true. Once you start something, the possibilities are endless. For example, this blog! I had been thinking for a long time about taking up blogging. I felt I had a unique outlook and voice and I wanted to share it but I had never been brave enough to take the plunge. Many times I tried my hand at blogging, it lasted for a few weeks and I slowly let it die down. It was easy for me to lose focus and not be as committed because I didn’t feel invested enough. This time around I decided to be more proactive about my blog. I paid for my own domain, got more hands-on into the look and feel of the blog, and decided to write about what I love. The commitment is bigger because I have put so much more of myself this time and I want to see this venture grow and reap its rewards…But getting back on topic, what I mean to say is that once you have an idea you just have to strap on your big girl boots and take the risk, no matter how daunting the task may seem. It gets very scary at times because it is my voice and getting personal is always hard, but if you don’t try you will never get ahead in life. All it takes is that one step towards your journey and most likely everything else will play itself out. I’m sure you will only look back and be grateful for the opportunity with no regrets.

Compost Cookie Recipe

So during this long weekend I decided to get some baking done, which should not be surprising for any of you LOL and I decided to try a MILK Compost Cookie Mix I had bought a couple months back. So far you probably have noticed that I’m all for easy and sweet recipes, even if they involve pre-made mixes, and this one did not disappoint. This recipe has quite a mix of flavors: chocolate, butterscotch, oats and coffee! You can add some extras like crushed pretzels and chips but I decided to skip that and stick to the basics of the cookie mix.
This is all you will need:
  • MILK Compost Cookie Mix from Target
  • 1 egg
  • 4 tbs of softened butter
  • Optional: crushed pretzels and chips


Put them in the oven at 375F for 15 minutes and….

You’ve got delicious chocolate, butterscotch and oats cookies that are just the right amount of gooey and yummy! Place them on a cooling rack and try to eat them as soon as you can LOL, I don’t recommend putting these in the fridge because they tend to get hard and you would need to microwave them prior to eating to keep the gooey feeling.

Life as a medical student can become pretty hectic. Between all your tests, volunteer work and days at the hospital it is sometimes difficult to maintain a balanced life. This gave me the sometimes-unhealthy opportunity to try out many food places in Ponce, PR because of the lack of time to prep meals at home. Food is something I am very passionate about, especially when it comes to baking, pizzas and pasta. It also gives me a chance to catch up with friends when you don’t have much free time. Here is a round-up of some must-try places if you ever visit this side of the island.
  •  Rico Buey Gyros You might think this is just a food truck and drive by it without a care, but trust me, you are missing out on some delicious gyros and burgers. The lamb burger is to die for with its soft kaiser roll and signature homemade fries. Can’t miss this local favorite.
  • Campioni Pizza Birra & Tapas Another local favorite with its signature wood-fired oven pizzas. A hotspot for the college students and young professionals featuring live music every Friday and Saturday. You can’t go wrong with their scrumptious lasagna.
  • Coffee Sides Recently booming due to local delivery service, this coffee shop has a signature “Mallorca Burger” that will leave you begging for more accompanied by their french and sweet potato fries. Don’t leave without trying the fried cheese appetizer.
  • Fresco Aroma A local coffee shop with their signature coffee selection and the “best baristas of the south”. Make it your mission to try the “Brown Sugar” sandwich with ham, pesto sauce and spinach served on hot and toasty artisanal bread with a side of wedge fries.
