Happy Valentine’s Day everyone! Today is the day people actually remember to show how much they appreciate each other! On a less sarcastic note, be thankful for your friends, family and yourself. And even if you don’t have an SO today, cherish and appreciate YOURSELF. So for this celebration it is only logical to get into the mood and bake something pink and sweet that you can share or just keep to yourself haha. So I decided to make a super simple recipe of strawberry and white chocolate cookies. These cookies are sweet and have a strawberry taste that isn’t overpowering. Also, they are on the fluffy side as they use cake mix as a base. They are very easy to make and can be whipped up for any occasion and with almost no ingredients. I promise they will become a staple whenever you want to have a quick fix for your sweet tooth or when you have to take something for the next work meeting or your kids’ get-together. These delicious cookies take around 30 minutes or less to prep and bake. All you will need is a strawberry boxed cake mix and a few more items!

* Pillsbury Moist Supreme Strawberry Flavored Premium Cake Mix
* 1/2 cup of Vegetable Oil
* 1 cup of White Chocolate Morsels
* 2 eggs

Once you have all your ingredients you can mix them by hand or use an electric mixer. I suggest using an electric mixer since the mix becomes dense. Add the cake mix, eggs and vegetable oil, mix them on the lowest setting for 3 minutes, then begin adding the white chocolate chips to the mix. Use a cookie scoop to scoop your cookie mix into parchment paper on a cookie sheet. Now you are ready to set these delicious cookies in the oven for 13 minutes at 350F.

Once they are done, place them on a cooling rack for 5 minutes and DIG IN! Whatever cookies you don’t eat at the moment, just put in the fridge to enjoy later : )
